Recipe: Homemade Twix Biscuits
Ingredients (for about 20 biscuits):
Cookie base:
200g 00 flour
100g cold butter
50g icing sugar
1 pinch of salt
1 teaspoon vanilla extract
1 egg yolk
Caramel layer:
200g sweetened condensed milk
50g brown sugar
50g butter
1 tablespoon honey
Chocolate coating:
200g milk or dark chocolate
1 tablespoon seed oil (optional, to make the coating shiny)
Method
Prepare the biscuit base
In a bowl, mix the flour with the icing sugar and salt.
Add the cold butter cut into pieces and work the mixture with your fingertips until it becomes sandy.
Incorporate the egg yolk and vanilla extract. Form a smooth dough, wrap it in cling film and leave to rest in the fridge for 30 minutes.
Bake the biscuit base
Roll out the dough to a thickness of about 1 cm and cut out rectangular or round bars.
Place the biscuits on a baking tray lined with baking paper and bake in a preheated oven at 180°C for 12-15 minutes, until they are lightly golden. Leave them to cool completely.
Prepare the caramel
In a small saucepan, combine the condensed milk, brown sugar, butter and honey.
Cook over low heat, stirring constantly, until the mixture is thick and golden (about 10 minutes).
Drop a spoonful of caramel onto each biscuit and leave to cool completely.
Add the chocolate coating
Melt the chocolate in a bain-marie or in the microwave. If you like, add a spoonful of seed oil for a shinier coating.
Dip the top of each cookie in the melted chocolate or cover them entirely, if you prefer.
Place the cookies on parchment paper and let the chocolate harden at room temperature or in the refrigerator.
Serve and store
Once solidified, the Twix cookies are ready to enjoy!
Store in an airtight container at room temperature for 4-5 days.
